Creamy Nutella and Roasted Fresh Strawberry Pancakes

Deliciously sweet, oozing with warm Nutella and paired with the tangy tart berry this is the ultimate Shrove Tuesday treat.


  • 2 eggs
  • 1/2 banana mashed
  • 1/4 tsp baking powder
  • 150ml almond milk
  • 1 tbsp. coconut flour
  • 1 tbsp. honey
  • 2 tbsp. protein powder
  • Olive oil


  • 2 tbsp. Nutella
  • 10 raspberries
  • 10 blueberries
  • flaked almonds
  • 1 tsp honey


  1. Whisk up the eggs add the mashed banana and honey
  2. Slowly add the coconut flour, protein powder and baking powder
  3. Add milk until the mixture begins to get runny
  4. Warm up a pan add a splash of oil
  5. Place 1 spoonful of pancake mix into the pan
  6. When bubbles begin to form on the top of the pancake film over
  7. Once golden brown both sides remove from the pan.
  8. Spread the almonds out on an oven tray and place in oven at 180c for 4-5 minutes
  9. Cut the strawberries in half, mix with honey
  10. Place on the same oven tray as the almonds and place back in the oven for a further 3-4 minutes
  11. Take the almonds and strawberries out of the oven and leave to cool
  12. Decorate pancakes with strawberries, flaked almonds and Nutella
