Lemon and Cashew Coleslaw
The ultimate BBQ side dish.
It’s the perfect accompaniment dish to any Summer BBQ, packing in plenty of vegetables, and just the goodness you need to side your burger.
We’ve removed the usual ‘unhealthy’ culprit mayonnaise and replaced it with a homemade version, consisting of just cashews and olive oil. That’s right, home-made mayonnaise. And the best bit? It’s plant based too, meaning whatever diet you follow, you can enjoy this one on us. On top of this they are packed full of vitamins, minerals and antioxidants. These include vitamins E, K and B6, along with minerals such as copper, phosphorus, zinc, magnesium, iron, and selenium.
Cashews are high in protein, and rich in heart healthy fatty acids. On top of that, they play host to a rich nutty flavour that makes them the perfect addition to any ‘sauce’.
It’s easy to make, taking just 10 minutes to whip up. So, what are you waiting for?
- 2 Carrots
- 1 Red pepper
- 1 White cabbage
- 1 Bunch kale
- 5 Spring onions
- Handful of cashew nuts
- 10ml Olive oil
- 1 Lemon
- 50ml Water
Grate the carrot
Finely slice the cabbage, kale, red pepper and spring onion
Place all ingredients into a bowl
Put cashew nuts into a blender, turn on to slowest speed and leave to blend for 2 minutes
Slowly add the olive oil to the blended cashews
Slowly add the water- do not add too quickly as mayonnaise could split
Finish with lemon zest and lemon juice
Mix the cashew mayonnaise through the sliced cabbage to create a coleslaw
