Kale is one of the most nutrient-dense foods available to us and is versatile too! Did you know per calorie, kale has more iron than red meat and more calcium than milk? Swap out your regular leafy salad and enjoy this fresh zingy juice.
If you were to eat this recipe in full, you'd be nearing 100% of your daily calcium intake, but we don't recommend you do that (although it is delicious), we recommend you spread it out and snack across the week, for a daily hit.
White fish is a versatile high protein alternative, as well as providing an important source of B-vitamins such as vitamin B12, B6 and Niacin, which play an essential role in the process of energy production.
120g vegan chorizo
1 yellow pepper (diced)
1 red pepper (diced)
2 cloves of garlic (crushed)
1/2 tsp smoked paprika
400g chopped tomatoes
4 free-range eggs
1/2 bunch chives (chopped)
Preheat the oven to 180 °c.
Place the diced onion and chorizo into a cast iron pan and begin to sauté.
Once the onions begin to colour, add the diced peppers, and continue to cook for 4-5 minutes.
Add the garlic and the smoked paprika, cook for 2 minutes then add the tomatoes.
Turn the heat right down and leave to simmer for 10 minutes, stirring occasionally.
Make four wells into the sauce and crack an egg into each.
Place the pan into the preheated oven and leave to cook for 10 minutes, when the whites of the eggs are cooked, but the yolks are still runny.
Scatter over the chives, serve, and enjoy!
Every sunny day in the UK is filled with the smell of barbecues and the bustling sights of parks and commons filled with picnicking parties. This is especially relevant with lockdown easing, but still not being able to see loved ones indoors.
Taking good care of your health has never been more important, and if you are finding you're constantly snacking during lockdown, then you're not alone. Many of us, our team included, are looking to the fridge out of boredom, restlessness and stress.
So many of you asked for savoury snacks, so here you have one. A great afternoon choice to boost your brain health and productivity, packed with plenty of flavour and an abundance of nutrients.
Mackerel is the richest fish source of EPA/DHA, the healthiest type of omega 3 fatty acids which are important in the maintenance of healthy brain and nervous tissue. Diets rich in fish containing these fats have been linked to improved concentration and memory; whilst egg yolk contains a fat like B vitamin called choline. This choline promotes the release of certain neurotransmitters which helps improve our memory and reaction times.
Tasty and seriously good for you? We'll take it!
